A few days ago we posted this fun video with one of our favorite burger recipes ~ Cilantro Spice Turkey Burgers served over arugula greens! Many of you asked for a vegetarian burger option and this tasty version happens to be vegan too! The base for these patties is millet, a superfood grain similar to quinoa that is also gluten free. If you haven’t tried it yet, you’re in for treat ;)
These Millet Medallion Veggie Burgers make quite a splash as bite sized appetizers or as traditional burger over greens and with organic ketchup!
Veggie Burger Medallions
Makes 8 Small patties or 4 Servings
- 1/2 cup millet
- 1 1/2 cup water
- 1 zucchini
- 1/2 white onion, minced
- 1/2 cup of shredded kale
- 1/4 cups of parsley
- 3 cloves of garlic, minced
- 2 Tbs. flax meal
- 2 Tbs. tamari
- 1 lemon, juiced
- 2 Tbs. Dill
- 1/2 tsp. sea salt
Place millet in pan with water and bring to a boil. Once boiling, turn down and simmer for 20 minutes or until all water is absorbed and millet is fluffy. Transfer millet into food processor and add remaining ingredients. Pulse to incorporate but don’t blend. You want texture and color.
Transfer mixture to bowl & sprinkle flax meal over batter. Mix in and let sit for 10-15 minutes. The flax meal is what helps the patties hold together. Form small to medium size patties by rolling in your hands, then flattening out.
Heat 1 Tbs. of grapeseed oil in skillet. Sauté patties until golden brown on each side, about 5 to 7 minutes. Serve warm or room temperature topped with your favorite veggies and condiments over a bed of arugula.
