Karena’s Turkey Chili Recipe

We LOVE chili!!  Not only is it delicious and quick to make, it’s full of nutrition!  Beans are full of protein, antioxidants and fiber.  Plus they are low in fat!  Black beans are rich in cancer fighting antioxidants called anthocyanins…the same antioxidants found in grapes and cranberries. Kidney beans have vitamin B12 which helps your memory and brain function.  Pinto beans are chuck full of fiber that helps stabilize blood sugar, lowering the risk of type 2 diabetes.  Eat it up!!

1.5 lbs lean ground turkey

2 Medium chopped red onions

1 tablespoon olive oil

2 cups sliced mushrooms

1 medium chopped green bell pepper

2 tablespoons ground cumin

1 tablespoon cayenne

1 tablespoon dried oregano

1 tablespoon chili powder (add more if you like spicey!!)

1 can chopped green chilies

1 can whole roma tomatoes

4 cups of water

1 can black beans

1 can kidney beans

1 can pinto beans

(sometimes we add a little cinnamon… that’s Katrina’s mom’s trick for a little kick!)

Cook the onions in a large saucepan over medium heat for about 10 minutes.  Add mushrooms and peppers, cook 2-3 minutes.  Add turkey and cook until turkey is no longer pink.  Add seasonings, beans and water.  Reduce heat to low. Cover and simmer for at least 30 minutes.  We like to simmer a little longer so the flavors are soaked up :).

*Makes 8-10 servings

Hope you guys enjoy!!!  Let us know if you make it :)

Could this be done in the crockpot instead? Just sautee and then put in the crockpot?

It doesn’t say when to add the tomatoes and whether you need to do anything to them first…
