RECIPE: Tone It Up Low Carb, Organic Blueberry Muffins!
These are what we like to call our ‘muffin top free muffins’–enjoy them without the guilt!
- 2.5 cups vanilla Boku protein powder
- 1.5 cups egg whites
- 3 tbs crushed walnuts
- 2 tbs ground flaxseed
- 2 tbs unsweetened almond milk
- 1 tbs coconut oil
- 1.5 tbs cinnamon
- 3 tsp baking powder
- 1/8 tsp sea salt
Combine ingredients in large mixing bowl.
Mix well.
Stir 1/2 cup blueberries into mixture.
bake at 350 for 15 minutes or until middle is cooked- tooth pick clean.
Top with powdered stevia!
We love to use Boku in many of our recipes–it provides a healthy, natural way to get your protein requirement into just about any recipe.
For anyone on the Tone It Up Diet Plan, these muffins are a perfect snack for meal 4.

2.5 Cups Boku powder?? (is that 2.5 scoops?)
Also 1.5 Cups of egg whites? How many muffins does this make? That’s a lot of egg whites.

Can you explain why coconut products (oil and shredded coconut) are healthy? Coconut has a lot of saturated fat. I know it’s natural, but it doesn’t seem like it would be that nutritious. Also, can you only buy Boku from their web site? I couldn’t find it at Whole Foods. Lastly (sorry for all the questions!) can you provide the nutrition facts for these muffins. Thanks girls!

Defienttly gonna give these a try but I live in UK and as far as I know we cant get Boku here so Ill have to use my vanilla whey protein instead.

Smash up or blend about a half a banana or 1/4 cup applesauce to use as an egg replacer in baked goods such as muffins, pancakes or yeast-free quick breads, such as pumpkin bread, and of course, banana bread! Bananas and applesauce add the perfect amount of thick moisture, like eggs, but they won’t help your dishes rise or turn out light and fluffy, so be sure the recipe you are using includes a bit of baking powder or baking soda to help it rise if needed.
