KRAZY KOCONUT KAROB SNACK BITES, Raw, Vegan, Gluten Free

Karena & Katrina’s ‘KRAZY KOCONUT KAROB BITES!”

It’s ‘We Love Food Friday!’  These are an amazing snack for everyone… they are VEGAN, GLUTEN FREE, RAW & DELICIOUS!

We like them for a snack, energy boost before a workout and to serve with friends!  This weekend we brought our other peanut butter bites that were featured in Women’s Health Magazine to our Oakley Napa Women’s Retreat to share with all the women from Shape, Women’s Health, Asics and more :)  They are always a hit too…

Ingredients for the Krazy bites :)

2 cups Pitted Dates (we prefer Medjool)

1/2 cup Unsweetened Organic Coconut Flakes

½ cup no salt added Almonds (already slivered is easier)

½ whole no salt added Cashews

½ Cup Carob Chips

3 tbs ground flaxseed

Add a tiny bit of water or lemon juice to moisten (optional)

Directions:

Throw Dates, Coconut, Almonds, and Cashews, flaxseed in a blender or food processor.  Once processed, add Carob Chips last and mix them into the  ingredients by hand.  Roll into tablespoon size balls and enjoy!  Each ball will run you around 130 calories depending on the size!

We suggest keeping them in the freezer too.  :)

Why Raw?

We encourage people to eat as close to raw as possible.  When you eat raw food, from the earth and not processed, your body metabolizes it much easier… and people think the obesity epidemic is from eating carbs??  Take a look at all the chemicals in food now.  That may be the problem.  One way to slim down and tone up, is to eat more raw food in your diet.  The Raw Food Diet is a diet based on unprocessed and uncooked plant foods, like fresh fruit and vegetables, sprouts, seeds, nuts, grains, and beans.  Think of food that the earth gives you :)  If you are on the “Tone It Up Diet Plan”, then you know you are including all these foods in your diet and are eating 70% RAW!!  It really is amazing for toning up.

It’s believed that heating food above 116 degrees F destroys the enzymes in the food that aid in digestion and absorption of nutrients, therefore diminishing the nutritional value of the food.

Eating more raw food in your diet has benefits that are tremendous; increased energy, improved skin, weight loss, better digestion, and reduced risk of heart disease.  Hit up your local farmer’s market and load up on fruits and vegetables!

    In the directions, it calls for flaxseed to be mixed in, but it’s not on your ingredient list…how much flaxseed meal or just flaxseed is supposed to be added?

    Zarah – In the YouTube video above it says 3 Tbs ground flaxseed, hope that helps :)

    Is this recipe going to be in the ToneItUp cookbook? Christmas is coming and I think this would be a great snack for the holidays. Have you any snacks that are red and green?

    Oops, I also wanted to say that I used cacao nibs instead because that’s what I had and it turned out great.
