We LOVE Food Friday: Easter Brunch Egg White Fritatta

It's We LOVE Food Friday... and that means a Friday Night Food Challenge!!! Tonight... and this weekend we want you to avoid starches at dinner. Instead, go for lean proteins, all the green veggies you want and a little bit of 'good' fat! It might seem tough at first but most restaurant menus make this pretty easy so you can do your challenge even if you're out to eat :)

 

With Easter coming this weekend we're bringing you a healthy brunch recipe that you can bring to any type of brunch. This healthy dish is made with egg whites and a ton of veggies. Using egg whites allows you to cook with eggs without the cholesterol and unwanted fat that comes with the yolk.

 

This recipe is healthy, easy to make and looks great to serve. You may interchange the vegetables to fit your preference. This fritatta is a great way to eat healthy this Sunday or anytime your making brunch for a group :)

 

Veggie Egg White Frittata
1/2 Cup Mushrooms
1/2 Cup Yellow Onion, diced
1/2 Cup Tomatoes
12 Egg Whites
1/2 tsp Salt
1/4 tsp Fresh Basil, finely chopped
1/4 tsp Pepper
1/2 Cup Fresh Spinach
3 Tbs. light olive oil
Preheat oven to 350 degrees. In heavy skillet, heat oil and saute onions and mushrooms, stirring until soft. In a large bowl, beat eggs, and fold in salt, pepper, spinach, and basil. Pour egg mixture into skillet containing the onions and mushrooms and cook on top of stove over low heat, lifting from bottom with spatula as the eggs set. After 3 minutes or so add in tomatoes and then place the frittata in heated oven until firm and lightly browned. Remove from oven and cut into pie shaped pieces. Serve from the skillet while hot. Serves 4.

 

If you want you can replace the egg whites with egg beaters or another liquid egg substitute or silken/extra soft tofu.

We recommend serving this fritatta with a fresh fruit salad. You can make a deliciously creamy yet healthy dipping sauce for your fruit by mixing 0% Greek Yogurt, some honey, cinnamon and a pinch of stevia!

Remember the key to enjoying any big holiday meal without regretting it afterwards is to not starve yourself leading up to the occasion. Eat some small, light, healthy meals throughout the day (or the day before) so that it's easy to stick to reasonable portions when you finally sit down at a table loaded with food.
