Healthy Carrot Cake Muffins!!

Preheat Oven at 375

8 egg whites
1 cup Whole Wheat Flour
1/2 cup cottage cheese, fat free
4 scoops Any Whey protein powder
2 teaspoons baking powder
2 tablespoons vanilla extract
1/2 cup Stevia
3 teaspoons cinnamon
1 cup grated carrots
1/3 cup crushed pineapple drained or applesauce
2 tablespoons almonds — or walnuts, optional

morning muffins

1/2 cup frozen raspberries(thawed)
1/2 cup unsweetened applesauce
1/2 banana
1 egg white
1 tbs. olive oil
1/2 cup skim milk
1.5 cups whole wheat flour
1/2 cup oats
1/2 tsp. cinnamon
1 tsp. baking soda 

MIx all ingredients
Put in oven heated to 375 degrees Fahrenheit
Bake for 30 minutes or until golden brown
Makes 12 muffins

 

Pumpkin Spice Latte - Tone It Up Entry

Pumpkin Spice Latte (Healthy Version!) 1 C Almond Milk (unsweetened or vanilla) 1/8 t vanilla 1/8 t pumpkin spice 1 1/4 t Stevia 2 oz. (1/4 C) double strength coffee **Substitutes: 1) If you don't want Almond milk feel free to use Skim milk or whatever kind you like...Soy would work great too! 2) Instead of Stevia you could use regular sugar 3) I prefer to use a little extra vanilla extract since I used the unsweetened almond milk I love this, I hope you do too!

Vanilla Cinnamon Latte:
1 C Vanilla Soy Milk (Hot)
1 t Vanilla
1 1/4 t Stevia or Sugar
1/8 t Cinnamon
1/4 C or 2 oz. Double Strength Brewed Coffee
Put all ingredients in blender to make it frothy, enjoy! :)

Chocolate Oatmeal.m4v


Can be topped with/ almond butter for peanut butter cup oatmeal, strawberries for chocolate covered strawberry oatmeal, or raspberries. Delish!

1/2 cup oats
1 cup almond milk or water
1/2 tablespoon dark chocolate cocoa powder
dash of cinnamon to taste
1/2 teaspoon vanilla extract

Bring the above to a simmer over medium high heat for about 5 minutes.

When thickened, take off the heat and add 2 stevia packets. Finish with almond butter for Reese's like dish, or strawberries or rasberries.

 

Tone It Up Contest- Breakfast Recipe!

1/2 cup brown rice or couscous
1/4 C almond milk
1/2 tsp. cinnamon
1 T dried cranberries or raisins
1 tsp. sliced almonds
1 T honey
*Mix all together, heat in microwave or stove top :)

Perfect Morning Quinoa


 

Blueberry Smoothie (ToneItUp Contest Entry)

I absolutely LOVE this recipe to start off my morning! It gives you tons of energy for the rest of the day. I usually add a handful of spinach leaves for an extra boost, but I didn't have them today :'(
Ingredients:
3/4 cup frozen/fresh blueberries
1/2 cup greek yogurt
3 tbs orange juice
2 tbs plain soymilk
1 tbs honey
handful of ice cubes
This recipe is incredibly simple and fast, so it's great for the morning. Adjust the ingredients to your taste, I find that this combination is the tastiest for me.

1/2 banana (mashed)

1 tsp cinnamon
