What’s one of the best snack ideas whip up ahead of time? Muffins! We love muffins! They’re fun and always feel like a treat.

Your Blueberry Zest Muffins are great for any meal as part of your Tone It Up Nutrition Plan ~ particularly in the morning or post workout!

Bright, zesty and super delicious, these healthy muffins are great for a party or to share with friends. We like having one for breakfast with some coffee. Or in the afternoon paired with iced-tea flavored with a sprig of mint!

☀ Blueberry Zest Muffins ☀

1/4 cup coconut flour

1 Packet or Scoop of Perfect Fit Protein

1 cup fresh blueberries

3 eggs

2 tbs coconut oil

3 Tbs lemon zest

1 Tbs lemon juice

1/4 teaspoon baking powder

1/4 teaspoon of sea salt

Preheat oven to 400° degrees.

Mix together eggs, coconut oil, lemon juice and zest in a small bowl, either with a hand mixer or blender.

In a separate bowl combine perfect fit, coconut flour, baking powder, salt and mix thoroughly.

Next, combine dry ingredients into the wet batter and mix or blend well until there are no lumps.

Fold blueberries into batter right before pouring into sprayed muffin tins. Bake for 15-20 minutes or until center is cooked.

Makes 6 muffins! One serving = 1-2 muffins, depending on size :)

    Hey K&K…The vegan bikini series calls for this in week one however there is no instruction on how to make these vegan. Please let me know if a flax egg will do the trick and what the ratio is.

      I just made these with flax seed eggs and had to add a bit more liquid, other than that it turned out well. :-)
