Filled with sweet peaches and a hint of summer, your Tone It Up approved cobbler is here just in time to give you the perfect treat to end the week!
This recipe is comforting and good for you! Peaches are a great source of B vitamins, antioxidants, fiber and potassium to keep your skin healthy, your eyes bright and your body energized!

If you’re following the Tone It Up Nutrition Plan, this recipe is approved for Meals 1, 2, & 3 or for an occasional dessert! Katrina and I love this cobbler ~ it’s summery, sweet and full of flavor!
Serve with a dollop of Greek or coconut yogurt for quite the decadent treat! YUM!
2 cups of peaches, peeled and sliced
1 cup oat flour, coarse ground **
2 scoops or 2 packets of Perfect Fit Protein
1/4 cup coconut sugar
3/4 cup almond milk
2 tsp of lemon juice
1 teaspoon vanilla extract
1 Tbs of earth balance or butter substitute
1/2 teaspoons of salt
2 teaspoons baking powder
Cinnamon for garnish
*Oat flour is simple to make! Just take regular rolled oats and blend in your blender until it looks like flour.
**If you’re gluten sensitive, be sure to use gluten free oats
Preheat oven to 350° degrees.
Combine peaches, coconut sugar, lemon and vanilla together, making sure peaches are evenly coated and set aside.
In a separate bowl, combine Perfect Fit, oat flour, salt, baking powder and mix. Add almond milk and earth balance and continue to mix until batter is thick and smooth.
Add peaches mixture to a greased baking dish or divide equally in muffin tins. Scoop a thin layer of batter over peaches and sprinkle with a dash of cinnamon.
Bake for 40-50 minutes or until golden brown. Serve warm. Be sure to refrigerate leftovers!
