Your HAPPY ☀ Spring Salad!

It’s We ♥ Food Friday and today we’re sharing a surprisingly delicious recipe that will keep you lean and feeling light :)

We love a bright, fresh salad bursting with flavor ~ and your HAPPY SPRING SALAD is just that! It will satisfy your body and taste buds. The perfect salad is all about including plenty of yummy veggies, herbs and of course, the dressing!

HAPPY Spring Salad

1-2 cups of Salad Greens – romaine, spinach or arugula

1/2 cucumber, sliced

1/2 cup of cherry tomatoes, halved

1/2 red pepper, sliced

1/2 cup of shredded carrots

1 radish, sliced

1 Tbs of your favorite herbs; fresh of course ~ parsley, dill, cilantro or basil!

Golden Sun Dressing

1/2 cup of fresh lemon juice

1/2 Tbs of fresh minced garlic

1 Tbs Virgin Olive Oil

Drizzle of honey – about 2 teaspoons

Sea Salt to taste

Directions

Place all dressing ingredients, except oil into blender. Once well incorporated, add olive oil to the mix with blender on low. Allow to blend for 1-2 minutes.

Toss salad ingredients together in a bowl and drizzle with your Golden Sun DressingIf you like, add a piece of grilled chicken, fish or garbanzo beans for some added protein :)

This makes a great meal or a quick snack! Prep it ahead of time and bring it with you on-the-go to the office or school. If you’re on the Tone It Up Nutrition plan, this recipe is perfect for ANY meal!
