We LOVE Food Friday: Drop10 Faves


It’s We LOVE Food Friday and we’re sharing one of our favorite recipes from the Self Drop10 Challenge! This recipe makes a really simple lunch or quick dinner and is packed with complete protein!  Designed by our gals C&J Nutrition!! Check them out on twitter and send them some lovin :)

Quinoa Edamame Salad

1 cup quinoa, cooked

2/3 cup edamame, cooked and shelled

1/4 cup carrots, shredded

1/4 cup chopped cucumber


Sesame Ginger Dressing

2 tsp. sesame oil

1 tsp. rice wine vinegar

1 tsp. low sodium soy sauce

1/2 tsp fresh ginger, grated

1/4 tsp. garlic powder


Mix salad ingredients together in a bowl. In a separate bowl mix dressing ingredients. Drizzle salad with dressing and serve!
