Going GREEN for St. Patrick’s Day

Happy St. Patrick’s Day!

How was your week?  Any plans for St. Patricks day? We’re always sharing tips on eating Lean, Clean & Green… so in honor of St. Patty’s weekend we’re bringing you some of your favorite recipes that aren’t just green… they’re GREEN!

Protein Patty Cakes

Who would have thought that you could make your pancakes luminate green… you can’t even taste the difference!  It’s actually a great way to add some greens to your breakfast… maybe a regular? ;)


 

Spinach for breakfast? It may seem a little strange, but the spinach isn’t a noticeable flavor when added to the standard pancake recipe. It does at loads of vitamins and minerals though… not to mention the perfect green coloring :)

Here are the Protein Pancake batter ingredients:

  • 1/2 Tbs. Stevia
  • 1/2 banana
  • 3 egg whites
  • 1/2 Tbs. Almond Milk
  • 3 Tbs. Brown Rice Protein Powder
  • 1/2 Cup Spinach

Place banana, spinach and almond milk into a blender. Puree until you get a smooth, even green paste. Pour contents of blender into a bowl and add in the remaining ingredients. Stir the batter until bubble start to form. Spray a small, round skillet with non-stick cooking spray. Carefully pour the batter into the skillet until the round bottom is completely filled. Cook on low heat for about 5 minutes a side. Carefully flip the pancake and cook on the other side until just barely golden. Remove from heat and serve with fresh fruit (we picked kiwi for the green!) and top with real honey, maple syrup or agave.

Make sure you pour enough batter to fill the bottom of the pan :)

Shamrock Roll

  • 1 large Collard Green Leaf, rinsed
  • 1/4 Cup Quinoa, cooked
  • 1/4 Avocado, thinly sliced
  • 1/4 Cup Cucumber, thinly sliced.
  • 1/4 Cup Carrot, shredded
  • 1 lime

Spread Collard Leaf flat out on a plate. Spread a thin layer of cooked couscous or quinoa across the collard leaf. Place the sliced veggies onto the collard leaf & couscous. Squeeze the juice from the lime over the veggies. Tightly roll up the collard leaf until you have a neat roll. Stick toothpicks all the way through the the roll at 1 inch intervals. Cut the roll into sections between the toothpicks. Serve the section like mini sushi rolls!

If you are just making this for yourself you can eat it as a whole wrap instead of cutting into sections.

 

Kiwi Cocktail

  • 1 oz. Vodka (or clear liquor of choice)
  • 1 Kiwi, peeled and sliced
  • 2 oz. Almond milk
  • 1 Tbs. fresh Mint leaves, chopped
  • 1 Lime

Add kiwi, mint and almond milk into a blender. Puree to form a smooth blend. Pour into a martini glass and garnish with lime slice, kiwi slice and/or mint leaves.

If desired you can add club soda to make this drink a lightly carbonated spritzer.

Just leave out the liquour and triple ingredients for a smoothie!

 

Irish Coffee

  • 6 oz. Strong Coffee
  • 2 oz. Vanilla Almond Milk
  • 1 oz. Peppermint Schnapps
  • Brew coffee as desired. Add in almond milk and schnapps. Stir and drink.

Green Isle Splash

  • 3 oz. Club Soda
  • 1 oz. Midori
  • 1 Lime

Gently Stir club soda and midori to mix. Squeeze in juice from lime. Garnish with green fruit of choice… lime, kiwi or honeydew melon :)

We also love this Green Smoothie from Pure2Raw!!!

Ingredients: avocado, chia, turmeric, purple kale, fresh mint, ginger, lime, sunflower lecithin, banana
