Simple Couscous Salad Perfect for Meal 3 :)

Can we get some salad with that couscous!? ;)

This salad is simple, delicious and it makes a tasty Meal 3 as part of you Tone It Up Nutrition Plan or as a side dish.

Couscous Salad

Ingredients

  • 1/4 cup whole wheat couscous
  • 1 tbs olive oil
  • 1/2 tsp sea salt
  • 1/4 cup carrot, sliced
  • 1/4 cucumber, sliced
  • 1/4 cherry tomatoes, halved

Directions

In a sauce pan combine 1/4 cup water, olive oil and salt. Bring to a boil. Remove from heat and pour in couscous. Stir thoroughly and cover. Let stand for five minutes. Fluff with a fork and add vegetables. Stir and serve.
