Veggie Grill for ‘We Love Food Fridays’ :) Best Vegetarian Healthy Restaurant!

Hope you’re having a great Friday… many of you were royal Booty Callers and woke up to watch the wedding doing your bikini workouts!!! Today your challenge is choose a dinner tonight with no starches… not that starches are bad, but we want you to have a leaner/greener dinner. Choose vegetables, grilled fish or chicken, lean proteins and healthy fats like avocado, healthy oils, olives and nuts & seeds. The perfect option to order when out would be a lean protein with a side of grilled veggies. Also, beer is a starch… so opt for a small glass of red wine or champagne if you’re going to enjoy a drink tonight. One of the exceptions to starches is quinoa. Everyone on our nutrition plan knows this. It’s actually a seed & a complete protein! So if you want to throw some quinoa in your dinner, you may!! (whip sound from your trainers ;)

One of our very favorite places to go is Veggie Grill in Manhattan Beach, California at the El Segundo Plaza. It is the best tasting vegetarian food! Veggie Grill is not your stereotypical “bland” organic vegetarian restaurant. With their creative menu of soups, salads, and sandwiches, full of intense flavor, it caters to even the non-vegetarian. We have turned a ton of our ‘non-health conscious’ friends into veggie fans! We’ll be taking our grand prize winner with a friend to Veggie Grill at the end of the Bikini Challenge!!!! :) :) Below are the contest details.

Tone It Up‘s favorite dish is the ‘All Hail Kale Salad’ with added avocado and a side of the most amazing Sweet Potato fries–to share of course ;). They are baked first, then flash fried with no trans fat. Here’s our video visiting VeggieGrill!

This is how we ‘attempted’ to make our own ‘All Hail Kale Salad’ from Veggie Grill =)

  • Chop up 1 cup of kale & 1/4 cup red cabbage (superfood!!!)
  • We added 1/4 avocado (superfood=super body!!!)
  • 1/4 cup shredded carrots
  • Add 6 walnuts (superfood!!!)
  • Corn salsa– 1/4 cup chopped tomatoes, 2 tbs corn, 2 tbs chopped onion, fresh lime squeeze, add a little cilantro and sea salt.
  • Add grilled tempeh…
  • Oh yah.. and add 1/4 cup quinoa!! (another superfood!! :)

Tempeh is made from whole soybeans. It is fiber-rich and is much more ‘tender’ tasting than even chicken or tofu! It is also rich in protein, soy isoflavones (53 mg isoflavones per 100g) and a great source of mono unsaturated fats (cholesterol free). It’s also packed with calcium, iron and B-vitamins- great for hair skin and nails! The natural tempeh fermentation process also makes the soy more digestible. Grill it lightly at home– either with olive oil or coat with sesame seeds! If you can’t find tempeh at your local health food store, try grilling tofu :) Ginger Papaya Dressing In a food processor or blender we added…

  • 1 fresh, ripe papaya
  • 1/4 cup white rice vinegar (we made more of a vinaigrette)
  • 2 tbs agave nectar
  • 2 tbs fresh grated ginger root
  • 1 fresh lemon juice
  • a pinch of sea salt

It wasn’t quite like Veggie Grill’s salad and dressing, but we tried!! We can’t wait to take our grand prize winner with a friend to Veggie Grill at the end of the Bikini Challenge!!!! :) :) We’re flying the winner out to California for the ultimate Tone It Up experience!!!
