Tone It Up’s Quick and Healthy Cucumber Recipes!
With Summer here, there’s a lot of bbq’s! With our busy schedule we love to whip up this quick and healthy Summer Cucumber Recipes! Cucumbers are always a refreshing hit at any Summer get together :).
Cucumbers have a ton of health benefits too; Vitamin A, Vitamin C, Calcium, and Iron. Cucumber is also the best natural diuretic known–which is great for bikini season, right?
Creamy Cucumber Summer Salad
2 c. plain 0% Greek yogurt (we love Stoneyfield!)
1 green onion, chopped
1/2 tsp. sea salt
1/2 tsp freshly ground black pepper
Pinch of dill
1 garlic clove, crushed in a garlic press
4 cucumbers, pared and thinly sliced
Directions: Mix Greek yogurt with green onion, salt, pepper, dill and garlic. Add cucumbers and toss to coat with dressing….and enjoy! It’s that easy!
Spa Cucumber Ginger Juice -
1/2 cup cucumber juice
1 tbsp ginger syrup1 tbsp lime juice
1 cup ginger ale
2 mint leaves (torn)
For the Cucumber Juice: Peel and puree 2 cucumbers
For the Ginger Syrup: Place equal parts sugar and Stevia natural sweetener and water in a saucepan.
Add 1 tbsp peeled and roughly cut ginger. Warm until Stevia is dissolved. Seep for 10 minutes. Remove ginger chunks and cool.
Directions: In a mixing bowl, combine all ingredients. Stir until mixed well. Serve over ice and enjoy!
